Comfort Food with a Kick: Southwestern Lentil & White Rice Bake

This delicious and nutritious dish comes from the kitchen of Jade Miller, a Bozeman resident since 2015. With roots in her childhood, where church potlucks brought friends and family together, this recipe embodies that spirit – “In our household, we have a strong love for Mexican food, and this dish healthily combines the delicious and comforting flavors that warm your heart,” Jade shares.
With brown lentils and white rice as the base, it provides a hearty and satisfying founding, while an array of spices and fresh vegetables enhance the flavors. “It’s nutritious and filling, making it the perfect comfort dish,” Jade adds.
Ingredients:
- 1/2 large onion (or 1 medium onion), finely chopped (about 1 1/2 cups)
- 1 medium bell pepper of choice, chopped (about 3/4 cup)
- 4 cloves garlic, chopped
- 3/4 cup brown lentils
- 3/4 cup white rice
- 3 cups vegetable broth
- 1 can (15-ounce) petite diced tomatoes, undrained
- 1 can (4-ounce) diced green chiles, undrained
- 1 tablespoon taco seasoning blend or another Southwestern-style blend
- 2 teaspoons dried Mexican oregano
- 1 teaspoon dried thyme leaf—not ground
- 1 teaspoon salt
- Juice from one lime
- Freshly ground black pepper to taste
- 2 cups shredded cheese (Monterey Jack, Pepperjack, or white Cheddar) divided
- Chopped fresh cilantro for garnish
- Full-fat cottage cheese for garnish (This is a must!)
Method:
- Preheat the oven to 375 degrees Fahrenheit.
- In a deep 2–3-quart glass or ceramic baking dish, combine all ingredients except the cheese. Mix well.
- Cover the dish with aluminum foil and bake for 45 minutes, stirring once during baking.
- Remove the foil and stir in half of the shredded cheese. Sprinkle the remaining cheese on top.
- Return to the oven (uncovered) and bake until the cheese has melted approximately 10-15 minutes.
- Allow to stand for 10 minutes before serving.
- Garnish with cottage cheese and chopped fresh cilantro for a delicious finish.
Jade recommends pairing this dish with cottage cheese, which adds an extra layer of cool, creamy texture to balance the warmth of the baked dish and complement the vibrant flavors. “It’s a must!” she emphasizes.
