Greet Bozeman is delighted to introduce this month's business sponsor spotlight and host of our Launch Party: Aloys Scheer, owner-chef of La Brasserie, a passionate restaurateur with a deep-rooted love for French cuisine and culture.
Aloys brings over 20 years of culinary expertise to Bozeman. Originally from France, he moved to the United States at a young age with his family, who carried a deep-rooted passion for French culinary traditions. His mother and grandmother owned a restaurant in Paris, inspiring Aloys from an early age. After living in Bozeman for the past three years, he's found a natural connection to the area, enjoying the proximity to mountains, rivers, and extended family, many of whom have lived in the Bozeman area for over a decade.
Aloys's academic journey began with a Bachelor of Science in Hospitality Management and Marketing from Johnson & Wales University and a Master Certificate in Hospitality Asset Management from Cornell University in 2017. Before opening La Brasserie, Aloys served as the head of the food and beverage division at The Armory Hotel. In addition to his role at La Brasserie, he recently started as an adjunct professor at Montana State University, where he teaches in the Hospitality College, sharing his expertise with aspiring hospitality professionals.
In February 2024, Aloys acquired Blend, the former beloved downtown local eatery and winery, with a vision of preserving and transforming the former establishment's rich history by bringing a slice of France to Bozeman. La Brasserie opened in May 2024, offering a menu showcasing the best French gastronomy with carefully curated wines. This restaurant fulfills his lifelong dream of owning his own establishment, combining his love for wine culture with the French cuisine he grew up enjoying.
"Having my own restaurant has always been a dream of mine, and through this acquisition, I was able to turn that dream into a reality," Aloys said. "The love for wine culture has been a constant in my career and life, and combining it with the cuisine I grew up with is a perfect match."
Creating La Brasserie involved a complete rebrand, a fresh and stylish interior design, a new menu, and exclusive wine labels, reflecting Aloys's dedication to excellence. As Bozeman's first brasserie, La Brasserie brings the spirit and flavor of a Parisian bistro to Bozeman. Its intimate dining room is a cozy yet refined welcoming space where guests can savor a small bite, indulge in a glass or two of their exclusive wine, or enjoy a three-course meal from their authentic French menu. A smaller backroom space also hosts private dining events and parties. La Brasserie is the perfect spot for everything from a casual lunch to a romantic dinner.
In addition to its culinary offerings, La Brasserie stands out as an urban winery, developing and producing its own wines to ensure the perfect pairing with their French dishes. According to Scheer, developing these labels will involve partnering with vineyards and wineries to create unique and high-quality wines that will be exclusive to the establishment.
As the first brasserie in western Montana, La Brasserie is a welcomed, unique addition to Bozeman's vibrant food scene. Aloys explains, "By bringing this concept to Bozeman, we aim to fill that gap and offer locals and visitors a taste of authentic French cuisine paired with exceptional wines." To add to this endeavor, La Brasserie hosts a 'Dîner des Amis' event, where guest chefs showcase their French-inspired creations paired with the restaurant's exclusive wines. Their kickoff pop-up chef series in August welcomed the renowned Chef Neal Fraser. The event successfully included an evening celebrating the art of French cooking and bringing new culinary perspectives to Bozeman.
La Brasserie's impact on the community extends beyond its menu. Their partnership with the greater community extends to Greet Bozeman, Yellowstone Bank, and Design Republic, founded by local designer Lori Garden. La Brasserie also hosts weekly social dances in partnership with the Downbeat Vintage Swing Society, a local non-profit. Every Thursday evening, the restaurant opens its doors to a vibrant night of swing dancing, offering a beginner's lesson at 7:30 pm, followed by an open dance at 8:00 pm.
This elegant and exceptionally unique establishment is already elevating Bozeman's dining landscape. Sheer's commitment to and deep appreciation for French cuisine, high-quality wine, and community engagement has created an authentic and immersive experience for his guests.

Food Sampled: Moules Marinieres – Prince Edward Island Mussels and frites
How Did You Enjoy the Food? "Their Mussels are the best in town! They were fresh, flavorful, and straightforward. We appreciated that the White Wine and Butter sauce did not saturate the fries, nor was it overpowering the taste of the Mussels.

Food Sampled: Steak Au Poivre, Frites, and Autumn Squash Salad
How Did You Enjoy the Food? "Very much! The cut of beef was hearty and tender, and we loved the au poivre sauce served with it. The frites were crispy and golden. We enjoyed the three-course Menu Gourmand option, as the squash salad paired nicely with our steak frites."
