Red, White & Bread

An all-American loaf that's perfect for holiday gatherings and backyard celebrations.

This strawberry banana bread recipe bakes up soft, moist, and delicious! It’s everything you love about banana bread with strawberries! You can also use blueberries or raspberries instead, but I find the strawberries to be the best combo! To really spice up the flavor, add in some ginger and nutmeg along with the cinnamon. You can add in a few extra strawberries over the top of your batter for a pretty look. A touch of sparkle sugar, my signature ingredient, always adds a delicious crunch in every bite! INGREDIENTS
½ cup oil (I prefer olive oil)
½ cup granulated sugar
½ cup light brown sugar, packed
2 large eggs
2 tsp vanilla extract
¾ tsp ground cinnamon
¾ tsp salt
¼ cup sour cream
2 ripe bananas, mashed (about 1 cup)
1 tsp baking powder
1 tsp baking soda
2 cups all-purpose flour
1 cup chopped fresh strawberries. heaped
 
INSTRUCTIONS
1. Preheat oven to 350 degrees. Butter a 9x5 loaf pan.
 
2. In a large mixing bowl, combine the oil, sugars, eggs, vanilla, cinnamon, salt, sour cream, and mashed banana. Whisk until smooth.
 
3. Add the baking powder and baking soda, and whisk well.
 
4. Using a spatula, fold in the flour just until there are no dry streaks left. 
 
5. Gently fold in the chopped strawberries.
 
6. Pour the batter into your prepared loaf pan and bake for about 60 minutes or until a toothpick inserted into the center of the bread comes out without wet batter clinging to it. 
 
7. Allow to partially cool in the pan, and then remove to a baking rack to fully cool.
