Chipotle Pumpkin Soup

Perfect for Fall or Thanksgiving!

Ingredients:
3 (15oz) cans of Diced Tomatoes
2 Garlic Cloves, peeled
3 Chipotle Peppers in Adobo (canned)
1 (15oz) can of Pure Pumpkin Puree
1 (15oz) can of Chicken Broth
ΒΌ Cup Heavy Cream
Salt
Optional Garnish Sauce:
2 Tablespoons of Olive Oil
1 Jalapeno
5 Tablespoons Lime Juice
Optional Soup Garnish:
Shredded Mozzarella Cheese
1 Tablespoon Minced Cilantro

Directions:
Place all soup ingredients, except pumpkin, into a food processor and blend until liquified. Add blended ingredients, pumpkin, and broth into a pot, bring to a boil and then simmer for 20 minutes. Salt to taste. Add cream prior to serving.

For the Sauce:
Add all sauce ingredients to food processor and liquify. Add a spoonful to the top of each bowl (best if cheese is added as a topper first).

Cheese Garnish:
Preheat the oven to Broil. Place shredded cheese on top of hot soup in the bowl. Place the cheese-topped soup in oven safe bowls and place them into the oven until bubbles began to form in the cheese (usually less than 4 minutes).
