Robin's Grilled Fish Tacos
You will need the following:
1. Corn Tortillas (WARMED)
2. Sliced Avocados
3. Fresh Fish of your choice (I have used sea trout, redfish, mahi mahi, shrimp…)
4. Sour Cream Chipotle Sauce (can be made in advance)
- 1 8oz container sour cream
- 2-3 chipotle chilies in adobo
- Squeeze of fresh lemon juice
- Salt and pepper to taste
5. Cole Slaw (stir together at the last minute so it won’t get soggy)
- One bag coleslaw mix
- Extra Virgin Olive Oil
- Squeeze fresh lime juice
- Scoop of fresh salsa
- Chopped green onion
- Chopped fresh cilantro
- Salt & pepper to taste
Directions:
Season the fish with a squeeze of fresh lime/lemon; Sprinkle with Ancho & Chipotle Chili Powders; Salt & Pepper to taste, then grill on med-high heat for 4 minutes per side or until flesh flakes easily away from skin. DO NOT OVRECOOK
Now assemble the tacos: Take a warm tortilla, fill with a dollop of sour cream sauce, slice of fish, avocado and top with fresh coleslaw and salsa. ENJOY!
