The Capital is a sleek, vibrant cocktail showcasing the tropical sweetness of pineapple with the smooth clarity of Wheatley vodka. The infusion process creates a bright, naturally sweet profile, while the vigorous shake produces an elegant, airy foam that gives the drink its signature look. Ingredients:
3 oz Capital (pineapple-infused Wheatley vodka; see infusion instructions below)
Ice (for shaking)
Optional Garnishes:
A thin pineapple slice
A pineapple leaf
A sprinkle of edible gold dust for an elegant touch
Pineapple-Infused Vodka (Make Ahead):
Slice 1 fresh pineapple into chunks, removing the core. Place the pineapple pieces into a clean, large jar or container.
Pour a bottle of Wheatley vodka over the pineapple, ensuring the fruit is fully submerged. Seal the jar and let it infuse in the refrigerator for 3-5 days, shaking gently once a day.
Strain the vodka through a fine-mesh sieve or cheesecloth to remove the pineapple pieces. Store the infused vodka in a clean bottle.
Preparing the cocktail:
Place a martini glass in the freezer for a few minutes or fill it with ice water to chill.
Pour 3 oz of pineapple-infused Wheatley vodka into a cocktail shaker, adding plenty of ice to ensure proper chilling and foam creation.
Shake the cocktail vigorously for at least 20-30 seconds. The longer shake ensures the natural foam forms from the pineapple infusion.
Strain the shaken cocktail into the chilled glass, allowing the foam to naturally form on top.
For a tropical touch, add a thin pineapple slice to the rim or float it on the foam or place a single pineapple leaf in the foam for a minimalist, striking presentation. For an elevated, luxurious finish, lightly sprinkle edible gold dust over the foam.
