Sheet Pan Lemon Herb Salmon with Vegetables
The holidays are now behind us, and like most of you, I also turn my attention to “eating healthier” in the new year. One of my favorite proteins is Salmon, and I found this simple one-pan recipe worth trying on any busy winter evening and it’s both nutritious and satisfying.
It can be customized with your favorite veggies and is packed with omega-3s from the salmon and fiber-rich veggies. The fresh lemon and herbs brighten the dish, making it look like a gourmet meal with minimal effort.
Ingredients:
- For the Salmon:
- 4 salmon fillets (4-6 oz each)
- 2 tablespoons olive oil
- 2 tablespoons fresh lemon juice
- 2 teaspoons minced garlic
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme (or fresh, if preferred)
- Salt and black pepper to taste
- For the Vegetables:
- 1 cup cherry tomatoes
- 1 bunch asparagus (or your favorite green vegies … zucchini, broccoli, etc.)
- 1/2 red onion or shallot, sliced
- Fresh garlic, full cloves and some with the top cut off
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- Salt and pepper to taste
- For Garnish:
- Lemon wedges
- Fresh parsley or dill, chopped
Instructions:
- Preheat the Oven:
- Preheat to 400°F (200°C). Line a large baking sheet with parchment paper or lightly grease it.
- Prepare the Salmon Marinade:
- In a small bowl, mix olive oil, lemon juice, minced garlic, oregano, thyme, salt, and pepper.
- Place salmon fillets on the baking sheet and brush generously with the marinade.
- Prepare the Vegetables:
- Spread the vegetables evenly around the salmon on the baking sheet and generously season with olive oil, garlic powder, salt, and pepper.
- Bake:
- Bake for 15-18 minutes, depending on the thickness of the salmon, until the fish flakes easily with a fork and the vegetables are tender.
- Serve & Enjoy:
- Garnish with lemon wedges and fresh parsley or dill. Serve straight from the pan for easy cleanup!
This dish is endlessly adaptable—swap out the veggies for whatever you have on hand or add a side of quinoa or roasted sweet potatoes for a heartier meal. It’s a balanced, flavorful dinner that feels like comfort food but fits right into your healthy goals.
