My Personal and Most Favorite Carrot Cake Recipe!
So many fresh carrots!
Carrot cake is a beloved classic in the realm of baked goods. Its moist, spiced texture and cream cheese frosting make it a standout on any occasion. Whether you're a seasoned baker or a beginner looking to make a memorable dessert, this carrot cake recipe will surely impress. Here’s how to make this delicious cake:
Ingredients:
For the cake -
- 4 cups of raw, grated carrots
- 2 cups all-purpose flour
- 2 teaspoons baking soda
- 2 teaspoons ground cinnamon
- 1 teaspoon salt
- 2 cups granulated sugar
- 4 eggs
- 1 cup vegetable oil
- Optional: chocolate chips, walnuts, almonds, pecans, etc.
For the frosting -
- 3 ½ cups powdered sugar
- 8 ounces cream cheese
- 2 teaspoons milk
- 4 tablespoons butter
- ½ teaspoon vanilla extract
Instructions:
For carrot cake -
- Mix the flour, baking soda, sugar, cinnamon, and salt in a medium bowl. Set aside
- In a large mixing bowl beat eggs until foamy. Slowly beat in oil.
- Add the flour mixture in slowly, beating until smooth.
- Mix in carrots and nuts.
- Pour into 3 greased and floured 9-inch runch cake pans. Bake at 350 degrees for about 25 minutes.
For frosting -
- Melt 2 tablespoons of butter
- Mix with the cream cheese
- Add milk and sugar alternately
- Add vanilla
- Mix everything well
- Frost on each layer and around the cake
Extra Tips:
- Use fresh carrots and grate them yourself for the best texture and flavor. Then, squeeze out the juice (if you do not do this, the cake batter will be very runny)
- Make sure your cream cheese and butter are at room temperature to ensure they melt better.
- My other favorite thing to do is to make half the recipe and put them in loaf containers to make a carrot cake loaf! (you would cook these for 30 minutes at 350 degrees Fahrenheit.)
